Transform boring leftovers into delicious vegan bites with this recipe for Swiss chard rolls.
If you’re the kind of person who hates eating the same thing every day, leftovers are a particular kind of conundrum. On the one hand, it took a lot of willpower to actually make food instead of ordering from Seamless yet again and you want to enjoy the fruits of your labor. (Not to mention, you don’t want to waste food.) On the other hand… you’re really bored of those roasted vegetables you’ve been eating for the past three nights, no matter how delicious they were the first time you ate them.
But reusing leftovers can actually be an exercise in creativity as well as frugality, as proven by chef Nyesha Arrington on the latest episode of Well+Good’s YouTube series Cook With Us. She takes two of the recipes she previously shared this past month— sheet pan veggie hash and roasted beet hummus—and with the help of some leafy greens, turns them into delicious, bite-sized Swiss chard rolls.
Chard will always bring to mind the farmer’s market episode of Parks and Recreation that blessed us with the raunchy chard stand (tagline: “let’s get a chard on”). But contrary to what the people of Pawnee think, chard is not just “celery with B.O.” It has a mild, slightly bitter flavor, and contains plenty of vitamin C and A, along with 300 mcg of vitamin K per raw cup and ample amounts of potassium, magnesium, and antioxidants. This is all to say that the nutrients in chard can help bolster your immune system, lower blood pressure, support bone and eye health, and improve heart health. Add in the fact that it can help clear breakouts and give you healthier skin, and it’s not chard to see why this leafy green is considered a superfood. IDK about you, but I’m going to be rolling all of my boring leftovers into little Swiss chard-wrapped burritos from now on.
